I love cakes that are simple to make.Less than $2.00 to make a medium sized bundt cake. I did not buy any cake mix when the kids were small. That was a luxury I could not afford. I used to use tang (a dry drink mix) mixed with water to make the juice. Blue Hake is from New Zealand. I cut the loins in chunks and batter. Pan fried is quick, easy and does not require a lot of oil. I love to use paprika in my batter. Everything is a golden brown to deep brown and very light tasting.
This is avocado halves covering cottage cheese mixed with green olives and onions
and some avocado salsa. Kids love it!
Great with grilled pork chops or grilled chicken. The kids said, "Mom, Mr. Turtle must have a head." Previously no head, feet or tail to poor Mr.Turtle so the kids put the olive for the head, and I went from there, and there you have it! Enjoy!
You don't have to buy buttermilk for this recipe. You can make your own. You can substitute honey for sugar and regular flour for rice flour if desired.
