    As a 3rd generation Norwegian-American family, Christmas just wasn't Christmas without Grandma's Julekage filling the house with the aroma of cardamom and fresh-baked bread. Several years ago I decided to modify the recipe so I could use my bread machine, and the family has enjoyed having this wonderful bread more easily available. I don't just make it for Christmas anymore! Freshly toasted and slathered with butter ... Nothing better! This makes a 1 1/2 to 2 lb. loaf.

    Super moist and very yummy oatmeal spice cake, with decadent coconut topping. I often get asked to make this for birthdays -- every time I make it, the cake pan gets emptied *fast,* and everyone asks if there's more! :)

    I've tried a lot of zucchini bread over the years, but my mother's recipe is still my favourite one ... lemon, orange, ginger and nutmeg give it a nice light flavour. Start checking for doneness at 45 minutes, don't let it overbake! :)

    Ever since I was a kid, I've never been fond of most bean salads, but many years ago a friend made this black bean and bell pepper salad for me, and it has become one of my -- and my guests -- all-time favourite summer dishes. It's great for picnics, barbeques, or any pot-luck! This recipe really needs to be refrigerated overnight to let the ingredients marinate and bring out all the flavours. Part of the appeal is in all the festive colours of the ingredients, so please, don't be tempted to substitute yellow onions instead of red, or to skimp on all three colours of peppers!! :)
