I always make this with cranberries but it could be made with almost any dried fruit. I adapted this recipe from a recipe in a mystery book by Joanne Fluke. This recipe can be doubled to make a 9 x 13 inch pan of cookies.
This is a light summer meal that you can also make with yellow or gray squash. I use Jimmy Dean turkey sausage crumbles to save time when I make this You can also stuff the squash in the morning and cover it without the water until the evening. I usually serve it with rice or pasta.
I never really liked chicken salad since it was always bland. So I came up with an idea to add more flavor. Cook the chicken as directed since that provides the seasoning for the salad. Feel free to adjust the amount of mayo to suit your taste.
I grew up eating Campbell's Scotch Broth soup but when I tried it as an adult it was lacking. So I came up with my own version. This is a hearty soup for a cold day.
Note: I usually make this soup ahead of time so I can refrigerate it and skim off any fat from the lamb.
