    I got this recipe from a friend more than 20 years ago and it remains a family favorite espcially on hot summer days. I cook the beef early in the morning. Sometimes even chop all of the ingredients then, too, so all I have to do is throw everything together when it is time for dinner. Teenagers especially love this. That is a bonus! Have yet to find anyone who doesn't love this super easy salad for dinner.

    I had a lot of leftover deli ham after making Monte Cristo sandwiches and wanted to whip up something quick and easy. This was the result. Good thing my husband wasn't home as my 16 year old son and his girlfriend devoured the whole thing! My son also came up with varieties that he will try. He thinks turkey with pesto would be good. I think you can sub most any cheese, meat and vegetable. I might do thinly sliced flank steak and blue cheese next time.

    Had leftover Dungeness crab leftover after dinner (how can that happen?) and wanted to use it for something this morning. After not finding exactly what I was looking for, I came up with this recipe. My husband was sceptical but loved it! The prep time is assuming you have already cleaned your crab. I had not, so took a lot longer. I made this in a large muffin pan. A 9" pie plate should work fine. Immitation krab should work. I think shrimp or scallops would be good as well. This is the first recipe I have posted. Please be gentle. :) Enjoy!

    This is from my favorite cookbook, The Seattle Classic Cookbook. (Not a bad recipe in the book!) I added the word "Perfect". I have used this recipe for years. Crepes are so easy to make and make you look like you are a pro. I have filled with everything from prawns to strawberries. I like to make extras to freeze. Last night used this recipe to make Chicken Cordon Bleu Crepes from Zaar. Yum!

    I love making fritattas! They are so easy and so versatile. You can substitute most any vegetable and add meats or seafood. This is just a basic recipe. I just make it up as I go so guessing on the measurements. I can get my whole family to eat their veggies when I make this.
