This is delish! Now I just need to work out how to make it gluten free and I have one wonderful anti alergy cake!
This is a mixture of different egg free recipies I have tried. Although we are not allergic to diary - i find this works best with water... however - there is no stopping me topping this with a cream cheese icing! To keep it diary free I simply spread some apricot jam on the top for a glaze
I often sub the carrot with zucchini and the sultana's with diced dried apricots
A make ahead breakfast, worthy of company but easy enough for every day! I recommend that you do not use quick or minute oats, go the real stuff and you will be happy! If you can not find currants, try sultanas.
I work full time and have a 2 year old and a domestically challenged husband. I find that cooking most of our meals on the weekend and freezing them is the only way to keep sane. Due to this we tend to have a lot of Rice/pasta dishes with meat sauces. In order to make sure we all get our veggies I make this up and add it into every dish with a sauce base.
Servings based on the amount of meals I use this in.
I made this for my 1 yr old and she ate 3 small bowls. This is from a kid that existed on milk and toast! It became a weekly option for her and I still make it now and she is 2. I make up this quantity and freeze in ice cube trays. I sometimes use this recipe but with larger chopped veggies to go with grilled chicken.
For younger babies leave out the curry and puree.

This is a dish I started making in small quantities for my 18 month old, until the rest of the house kept taking the small containers out of the freezer and eating them! Now I make it in a big dish and it is enjoyed by all. I make the cheese sauce from scratch, however you can choose to use any thickish cheese sauce you like. Prep time include making the cheese sauce.
Quick and easy if you use pre prepared stuff, not as quick but just as easy if you do it all from scratch. It is up to you the type of cheese sauce and the kind of mashed potatoes you use, spice it up, or leave it simple. This is loved by kids and adults in my house. Time based on making cheese sauce and potatoes from scratch.
Another one of my crock pot creations, this one we had last night. I woke up in the morning and popped all ingredients in the crock except beans including frozen beef and it turned out well.... BTW... this is all we had in the house, maybe some different veggies might be good too.
I am on a crock pot frenzy so I am writing up recipes that I think may be nice--have not tried this yet. I tried this last night, the flavour was wonderful, I made a quick change and added an extra cup of gravy.
This is a regular at our house, for now, with a near on 2 year old I use smooth peanut butter and add crushed peanuts to the adults meals. This is kid friendly so add some fresh or dried chili if you like a kick. I also use this with diced beef
This warming vegetable dish can be enjoyed as a meal or as a side. Play with the flavours and you can turn this in to a curry casserole (add curry powder instead of Italian herbs) or try Moroccan spices, Cajun spices or Hungarian spices... all delish! ------
