Cooking time includes minimum refrigeration time. It was recommended that slaw be refrigerated overnight and served with a slotted spoon to drain excess dressing.
This is a tasty recipe from Lifetime's Cook Yourself Thin, DH and I tried this for dinner last night and really enjoyed it. Only changes I plan for the next time is to leave the greens on the side as it made things messy and maybe to use about half the parsley. 1 serving is 2 melts. I hope you enjoy!

This is a great alternative to high fat and high calorie taco salads at Mexican restaurants. If you want more "oomph" to it: add grated cheese and ground chicken, turkey or crumbled tempeh. Also, the beans are really good warmed.

Very inexpensive meal and also healthy! As a side note: do not salt dried beans until they are cooked, as the salt slows down the softening process. On another note, so-called "cooking" wines or sherries contain lots of added salt you can avoid this by using a drinkable sherry in this recipe.
