Meltingly tender lamb on a bed of onions, potatoes and garlic with preserved lemons and greek seasoning. Not a pretty dish but really wonderful to come home to on a wet cold day, the smell is just divine. A crisp green salad, or greek, a big glass of red wine, cozy slippers - nothing else needed!! Please use floury potatoes not waxy and feel free to use more lemon or less depending on your taste but it will mellow and blend I promise!
An easy, velvety soup with complex delicious spice tastes, would make a wonderful start to a dinner party or a great lunch. Got this off the web ages ago and can't remember the name of the site. May need more lemon juice if the potatoes and carrots are really sweet so taste at the end, and I used more spices as I like a deeper flavour.
This is a recipe from Ballindalloch Castle. Wild thyme grows on all our river banks up here and in summer even in our town's drinking water you can taste the thyme - it is delicious. The blueberry also grows wild and when kids come home with a blue face they are said to have a 'blaeberry mou'. Sooo this recipe is full of the flavours of the Scottish Mountains.
Excellent side dish for grilled meat or couscous or on its own with yoghurt and a green salad, mango must be ripe and sweet or you will need to add honey to the dish to balance the flavours. From Modern Moroccan by Ghillie Basan
This is a really thick comforting lentil and tomato soup with a bit of added interest. Great way to use up the veg left in the fridge at the end of the week. The tomatoes can be soft and not the freshest but need to be tasty.
