    Low Fat/High Protein Yogurt Pudding

    Simple, high protein, low cal, low fat snack / light meal. Create any flavor you like. The protein content will vary with your powder. I consider a serving of protein powder to be 30 to 40 grams, but if you need more or less by all means make the adjustment. Please don't use a food processor or blender for this as you need to beat some air into the mix. Over-processing will thin the mixture.

    An interesting experiment... My goal was to get a bird from oven to table, as fast as possible (no brining) by utilizing a super-hot oven and the closed environment of the dutch oven. The result was a tender, VERY flavorful bird that would lend itself to many variations. Lemon/Oregano, Apple/cinammon, Lime/Cilantro.. etc...

    Here's a fun recipe for you and very economical as well. The brick serves as a fantastic source of steady heat and the weight of the brick ensures constant contact with the hot cast iron pan and yields a VERY nice, caramelized, skin. Extra richness is insured as the bird is cooked in it's own juices. The optional sauce is dangerous!, too good for words. Carve and serve!
