My mother made these cookies every year for Christmas and they were our favorites, she always frosted them with pink peppermint icing. Mom would make them early and put them in the deep freeze. We would come home from school and sneak a few out everyday. Many years she had to make another batch before Christmas.
This is my mom's recipe she always made them for Christmas, her's were always better than anyone else. She would form wreaths and put a Imperial Red at the top of the wreath. I never cared for the red hot so as an adult I just make trees and sprinkle with green sugar before baking.
During World War II meat was scarce and rationed. Butchers came up with a recipe for ham loaf for the holidays since most people could not afford a whole ham. Since then this recipe has been a family favorite and served at our family gatherings.
I got this recipe from a magazine many years ago. The tubs of caramel sauce made for dipping your apples into are expensive (at least for this mom) and this was a homemade version. Our family loves it.
This recipe has three different types of beans, corn, cilantro and lime juice and is always a hit at home and when taken to parties. We eat it as a bean salad but I have had people use tortilla chips to eat the 'salad'.
It's best to make this salad ahead of time and let it marinate a couple of hours (or longer).
