    Amazing sauce! You will never go back to canned after trying this one. For this enchilada recipe you can assemble by either filling and folding over your corn tortillas or just layer like a lasagna.

    I've tried several tomato cream sauce recipes. Some with sausage, some with chicken and some with shrimp. All very good but this one is my favorite. A very large recipe. Easily enough sauce for 3 pounds pasta. If you are not feeding an army go ahead and make full sauce recipe anyway and freeze the leftover sauce. It thaws and reheats very nicely. I typically buy the large can of San Marzano tomatoes at Costco. It's so much cheaper. I really think there is a difference in taste with the San Marzano. Just be sure to buy tomatoes that are packed in puree. Makes the sauce even richer. Adjust the seasonings as you like. I seem to make spicier every time I make by adding more garlic, and red pepper. So good!

    The "No Marsala" comes from...don't have to use it. Use any dry white for this recipe. This recipe is in my top 10 of all time favorites. The combo of these ingredients creates amazing flavor! Serve stacked on mashed potatoes.

    A hearty soup 50 years in the making. Joyce, one of my favorite people on earth happens to be 88 years old. I am lucky to be her neighbor. Once an avid cook, she has many recipe to show for it. You can pack a lot in in 88 years! Joyce has graciously passed along many of her recipes to me. She has beautiful handwriting and took great time in perfecting her recipes. She tells me on many, "Don't you dare change a thing! That recipe took me 50 years to perfect". This is one of them.
