My husband came up with this delicious comfort food made out of his favorite ingredients: bacon, ground beef, and cheese! The craziest part is he doesn't even like meatloaf but he LOVES this. I kept asking him "You made meatloaf? I thought you hated meatloaf!" The moment I tried it I knew he'd stumbled onto something fabulous. Definitely not for anyone watching their calories or fat intake, but perfect for the low-carb diet or the occasional splurge!
This recipe is simple and elegant, and of course delicious! I found this in the Martha Stewart magazine, had 1 bite and fell in love! The combination of balsamic and basil and tomatoes and mushroom and cheese is heaven on earth... Makes a great starter and is very light. This recipe is for one, just multiply ingredients by how many people you are serving.
My husband made this recipe up and served me these delightful enchiladas for dinner last night. Just the right blend of rich, savory, and delicious - this one goes on our 5 star VIP recipe list! There are enough enchiladas if recipe is made as is to feed a small army, bring to a potluck, or freeze and defrost for dinner a couple times a week for the next month! We chose to only make 10 enchiladas and saved the mix (by putting in freezer) for another batch at a later date.
Don't be scared off by the idea of putting mint in your drink - it's actually VERY refreshing! This is my absolute favorite cocktail! I was a bartender for 13 years and trust me I've tried a few cocktails in my time. I made some for my Mother-in-law and Father-in-law when I first met them and they still beg me to make them every time we go back to visit. This is the quick version and you can use EITHER vodka or rum (or both if you're feeling dangerous and daring).
Recipe from a cooking class my husband and I took in Thailand given by a wonderful chef who has owned restaurants both in the US and in Thailand. She was kind enough to give us her recipes to bring home the phenomenal tastes of Thailand with us. Feel free to add your own favorite vegetables (vary cooking times accordingly) to include straw mushrooms, bamboo shoots, etc. This is a relatively quick and super easy dish and if you like Thai food you are sure to love this recipe!
