    I threw this together to use up some ingredients. It seems like a perfect weeknight meal that can be made in a flash. This recipe is very tweakable, so you don't have to use the same toppings listed here. Next time, instead of shrooms and peppers I will probably use anchovies & pineapple (my favorite pizza toppings!)

    This is my favorite side dish to serve with steak, meatloaf or fried chicken. Adding healthy kale is a simple way to make potatoes more nutritious, and it turns the mashed potatoes an appealing green color without affecting the flavor much at all.

    Now this is my idea of pure comfort food. The tortillas make the crispiest, thinnest pizza crust possible and the combination of Spam, blue cheese and pineapple is surprisingly tasty. You can use your own pizza crust recipe in this, but if you love a thin crust pizza then I'd urge you give the tortillas a try. This recipe can be easily halved to make one pizza, but I always like having leftovers.

    I have recently discovered the glory that is Spam. People say if you're not introduced to it as a kid, you will hate it as an adult. LIES! I tried it at 28 and am in love. So versatile, and the way it just melts in your mouth like some sort of creamy meatcake is out of this world. Here is a burger recipe I came up with, and I like it more than a regular burger. I used Turkey Spam, which is just as good as the original and has 1/3 of the fat and calories. Regular Spam or Light Spam would work well too, I'm sure.

The soup is a delicious but unexciting Asian noodle soup; the add-ins are what really make it shine though.
