I think this is an old Boy Scout Recipe (they probably didn't use the beer, though). We look forward to camping just so we can make this (although there is no reason not to make it in the oven, we just like the "specialness" of it). I don't have kids, but if I were a kid, this would be a lot of fun to make, and easy! Prep time is just chopping and putting together your Creation!
My roommate in college could cook one recipe, and this was it. It is incredible. Everyone who has ever had it loves it. Also, it is amazingly easy--4 ingredients, no prep, just mixing in 1 dish. Make lots of rice, you will want to eat just the sauce over rice-TRUST ME! Great left overs. I always use extra sherry-it cooks off.
Yes, that says 10 POUNDS of Chick Peas--before I left college, I had to "borrow" this recipe from my favorite cafe, hence the industrial sized proportions. I think a #10 can is 10lbs, so scale the recipe down to your amount--I always cut everything in 1/3, and it still makes a lot!
My grandmother's famous P.S. The trick is to use more sour cream than mayo--gives a super creamy texture, not like supermarket deli potato salad. I add extra parsley and a splash of lemon juice, and I leave out the pimentos. Great to bring to BBQs.
