This a VERY similar recipe (that I found online) to the Neatloaf served at Sri Chinmoy restaurants around the country. It is so good. It is my fav. thing at the restaurant. You can eat it alone or on a sandwich with tomatoes and lettuce, etc.) ENJOY!
NOTE**** not sure if Lipton onion soup mix is veggie but you can also use any other veggie dry soup mix that doesn't have beef bouillon - check at your grocery store for vegetarian dry soup mixes - OR try one of these recipezaar recipes for onion soup mix substituting beef bouillon with vegetable bouillon #186221 or #24952
(FYI - After I posted this another Zaar member (thanks philocrates) - wrote to let me know that Lipton Onion Soup is vegan after all - http://www.petakids.com/accvegan.html)
This is an easy and delicious coffee cake to make. It could also be a dessert it you served with warm cream. I use half milk/soymilk and half orang juice in the recipe because I think the OJ adds another flavor but you can use all milk/soymilk in thye recipe. ENJOY!!!
I love sweet potatoes alot so I decided to figure out a way to make mashed sweet potatoes the way I like them, not too much added. I use half sweet potatoes and half yams just for variety but you can use all of one kind. ENJOY!
These are an adaptation off of Pecan Pie Cupcakes, I ran out of some of the ingredients but these turned out really great and cut down on the butter used. They are very sweet and are great as a midmeal or after meal treat.
This is a very easy and delicious dish I got from Moosewood Restaurant: Cooks at
Home. It can be served over couscous (my choice), rice, or orzo. Goes great with
a side of cooked broccoli or asparagus.
If you are serving more than two I suggest doubling the recipe! ENJOY!
Here's a wonderful snack with chips and a refreshing topping for bean or fish dishes. For color, use both yellow and red cherry tomatoes or bell peppers. If you like, make the salsa with just a single type of melon.
This is super yummy! And goes well with Summer Melon Salsa (which I have also posted so you can search it) - This comes from Moosewood (my fav. cookbook ever!)They recommend using fillets such as catfish, snapper, salmon, or tilapia for this dish
