    This recipe is from my friend Joan and is one of our favorites. I am guessing on the amounts for the salad ingredients. You can proportion them to taste or based on how many people you are feeding. The dressing recipe makes enough for two good-sized salads. You can make this a main dish salad by adding cooked chicken.

    I couldn't find this exact recipe posted, so I am posting ANOTHER cranberry scone recipe. :) My mom makes these and they always turn out moist and flaky. They are especially good if you use dried cranberries that are flavored with orange (I found them at Trader Joe's). Since I don't usually have buttermilk on hand, I combine 1 Tbsp. lemon juice plus enough milk to equal one cup and let it curdle while I am mixing the dry ingredients.

    These are SO yummy with spaghetti, or as an accompaniment to a soup like minestrone for a light meal. They take a little more time than I usually like to for a side, but they are well worth it!!

    These are more sweet than spicy and there are a few surprise ingredients that really make these little beef bites quite delicious! My husband is a "dipper" and created the tomato-based sauce that perfectly complements these non-traditional empanadas. The recipe makes 24 bite-sized appetizers, or you can make them twice as big and eat them for dinner. :)

    This recipe is different than the other recipes posted in that it uses delicious homemade chili beans rather than canned. You have to plan ahead to make this meal, and it takes a bit of work but it is well worth it! It's more of a special occasion meal and is very easily doubled for a larger crowd. My mom made these for us growing up--I think it is originally from Sunset Magazine.

    These bars are full of nutritious foods, including "good fats" in the flaxseed meal and nuts. I've been experimenting with granola bars after trying Kittencal's delicious recipe #77200--trying to find something that tasted that good but was good for you too. This is as close as I have come so far. :) They are still a little crumbly but have good flavor. You can substitute any nut-butter, nuts, seeds, or dried fruit that you have on hand. Omit the salt if you are using salted nuts or seeds.

    This is actually from Cooking Light, not my grandma, but it is moist and delicious and quite easy. If your chicken is on the small side, don't use quite as many veggies--they won't all fit. :)

    These muffins are moist and flavorful... especially good right out of the oven. (I just finished eating one. :)) This is similar to a few other recipes on Zaar, but this one happens to be my favorite and I was curious about the nutritional info, so I decided to post anyway. The recipe is easily halved, but I usually make the full two dozen... the first batch without the nuts and the second batch with. They are great for parties or for giving to your neighbors to say Happy Fall!!

    This is an easy, healthy, and delicious recipe. I got it from the book UltraMetabolism (which I highly recommend). I have made it with green split peas before and it still tastes great, it just looks kind of funky. :)

    California Salad With Curry Dressing

    This is an absolutely delicious main dish salad that I found in my church cookbook. I don't know how I missed it for so many years! This salad is especially attractive when served in a large shallow bowl with the lettuces on bottom, and each ingredient in its own section on the top. You can just toss the dressing and mix the salad at the table right before eating. The ingredients are easy to substitute and the recipe is easily halved.

    These peanut butter cookies are so yummy and even more fun when eaten from a stick with a snickers bar surprise in the middle. This is another recipe from my mom that I haven't made in years, but remember being very tasty! You could probably use just about any cookie recipe or miniature candy bar, but I haven't tried. It's fun to use colored candy or sugar to match the occasion (red/green for Christmas, pink for a girls birthday, etc.).
