    This is real comfort food. People will think that you made it from scratch. We like it for a fast meal, for pot-luck dinners, for chilly nights, etc. You can use boned chicken, but for a truly dump and cook meal, use the canned chicken meat. You will love it. It freezes well and it can be made in advance and cooked just before serving. It takes two casserole pans to cook it, so I often make one pan for our family and one to give away.     This is a very yummy, sweet party mix that gets a lot of requests. I usually make two batches during the Christmas season and one during Easter and sometimes throughout the year "just for the fun of it." If it has been a while since I have taken some to work, they start reminding me it is time to make another batch. It is very addicting. This makes a huge batch. You can cut it in half, but why? I have a large (28 quart) storage container that I make it in and store it in. You can use different colored M&M's for the different seasons, or use team colors for a football party or tailgate snack.

    This bread recipe was from my husband's grandmother. It is so simple to make and always comes out great. The original recipe did not have the vanilla in it, but I always add it. If I have bananas that are ripe, but I am not ready to make the bread, I just plop them in the freezer, peel and all. No need to put in a bag. They will turn black, but the insides will remain good and will be perfect for the bread. Just remove from the freezer, peel and add to the mixture.

    This is my version of red beans and rice. After searching through several and combining parts of many, this is what I came up with. It is probably not a traditional version. (I'm from Oklahoma, not Louisiana :) ), However, ever time I have taken this someplace, the dish comes back empty and several people ask for the recipe. I will often make early and then put it in a crockpot on low. It becomes very creamy when made this way. I usually sautee the veggies in a sprayed, non-stick skillet, but you can use 2-4 tablespoons of butter instead. This recipe doubles nicely.

It makes a 9x13 pan completely full, so is great for entertaining company. It is very easy to put together and can be assembled early and then baked at serving time. Fix a nice green salad and some garlic bread and your meal is ready.

    This is a great little appetizer recipe that my friend, Chris, gave me. She made them for a church function and many people left with the recipe. A serving platter of these and bruschetta would look very pretty together. The original recipe called for 36 slices of snack rye bread instead of the baguette bread. The prep. time does not include time to allow the zucchini to soak.
