Adapted from a recipe for Traditional Quesadillas found in a 1970s era Mexican cookbook from a newsgroup post 8/17/01 by Rich McCormack

    Recipe #229902

A quick recipe found in the March 9-11 USA Weekend. I look forward to trying it. It's just 4 Weight Watchers points. The recipe originally included croutons, but I'm on Weight watchers so left them off.

    Recipe #218029

A wonderful appetizer - always highly requested at our parties! From a Betty Crocker Appetizer recipe book - January 2004. I use store-bought meatballs. Meatballs will hold on Low Heat setting for about 2 hours. Hint- Trader Joe's makes a great cranberry-orange sauce, but only at the holidays. To make this recipe at other times, I just create a sauce with canned cranberries and about a 1/4 cup OJ. Enjoy! We sure do!

    Recipe #200142

Haven't tried yet, but looks good. The recipe mentioned that onion dip and/or flavored tortilla/wraps could be used to change the flavors.

    Recipe #200094

A flavorful Asian-inspired soup with antioxidant-rich veggies. Easy to make and great for freezing. I got the recipe from my local supermarket.

    Recipe #171436

A twist on the classic enchilada casserole.

    Recipe #171435

From a Weight Watchers book. Haven't made it yet, but hope to try soon.

    Recipe #171434

    From Child Magazine, May 2006

    Recipe #165276

A wonderful, healthy side dish. Even the kids loved it! I added a bit of parmesan sprinkled on top. From the back of a Pictsweet Spinach bag.

    Recipe #165251

A quick easy breakfast or snack that the kids love! Packed with protein and full of antioxidant-rich dried fruit and healthy nuts and seeds, these bites will be sure to please. I didn't follow the directions, of course, but ground up all the almonds and oats. It still came out great! I also ran out of rolled oats, so added oat bran. I think next time I'll also grind the sunflower seeds. Use any combination of dried fruits - any will be great! I also did not roll the balls in the almond/oat mixture, but just included it in the ball mix.

    Recipe #165250

Sweet mangoes blend beautifully with curry-marinated shrimp and veggies! It's even better the second day. You can substitute chicken for the shrimp. From June 2005 issue of Cooking Light.

    Recipe #143153

Hors d' oeuvres or brunch entree. I've never tried, but it looks good! From a "Lucerne" or Safeway brand package of Italian Four Cheese Blend.
