    Oprah is going vegan for 21 days and I found this on her website - I just wanted to get a few of the recipes on her site written down for future use in case they ever get taken down off her site, so here it is! Recipe is courtesy of Chef Tal Ronnen. Here is the description: "These Southwest-inspired black bean cakes are crispy on the outside, moist on the inside and perfectly seasoned. Serve them with Spanish brown rice and guacamole for a complete meal."

    I whipped this together the other day and the combo of flavours was really nice. The Mustard may have a smidge of fat in it, my jar said one serving had a gram of fat in it. I like the crunchy whole seeds of the whole grain Dijon. Hope you like!

    I love tomatoes, but unfortunately, they don't love me, I break out into eczema if I eat them. So whenever I am at a Middle Eastern restaurant chowing down on Falafels I am wistfully looking over at the tabbouleh wishing I could have some of those fresh greens. Well today I finally made something from scratch and my imagination that is worthy of being posted! (At heart, I am not a very good cook -- this must have been a fluke) This recipe below not only has no tomoatoes, but no wheat as well, another one of my allergies. (Sometimes I feel as if I am falling apart! :))

    I saw this recipe from a local magazine and was thrilled to see that it is the same recipe used in the best Mediterranian restaurant in town!!! The chef deigned to release the recipe, hope you enjoy it as much as we do. Here is the excerpt from the magazine: Moohammara is a tradition Lebanese appetizer, though it's less well known that its cousin, hummus. The nuts, red peppers and pomegrante give it a unique texture and a sweet, tangy taste that goes well with a variety of dipping foods. The recipe comes courtesty of Aida Abboud, chef and owner of Aida's Mediterranean Bistro. Abboud has been cooking up Mediterranean delicacies for 14 years.     Every now and again I get the urge to eat something fresh and healthy. I tried this raw diet soup out from a raw food website and found it to be quite delicious! The avocado gave it some richness and overall it was tangy and flavourful. I was pleasantly surprised! Remember not to warm it too much at the end (no more than 116 degrees Farhenheit or 46.6 degrees Celcius), so that you get all the healthy enzymes etc that come with a raw food recipe.

    My mom used to make these savory "pancakes" when I was younger and now that I am mostly vegan I am missing them terribly. So I decided to try to make an eggless version and it turned out pretty good! The potato is the binding agent that replaces the eggs. I hope the amounts are okay, they seemed to work for me. The "ham slices" below are the veggie simulated kind. Enjoy!
