    Started with a Rachael Ray recipe that looked amazing but very high fat and calories! Gave it a much needed fat and calorie makeover and this is how it ended up. It isn't a diet dish but much healthier than the original. Hope you enjoy!     We had a bumper crop of garlic this year and I drove myself nuts trying to find the best way to preserve the flavor all year! I tried roasting it but that didn't work for all recipes. I worried about spoilage and botulism when stored in oil. I read that storing in vinegar gives an acidic flavor to some recipes! Ugh! I came across this method an an agriculture site! Not only was this easy from start to finish it was convenient too! The only real work involved is peeling the garlic but that went fast while watching a show of tv or maybe even visiting with a friend- who can share the job! The system requires an amount of garlic so I used 1 head but use as much garlic as you like. Of course, there is no substitute for the flavor and texture of fresh, raw garlic! I found that this method preserves the flavor best imho. Enjoy!

Roasting your own peppers and chiles allows you to control the quality of the vegetables used and whether or not things like salt and oils are added!     Recently I found a bunch of "recipes" for using up those lemons that always seem to live in my veggie drawer until they are wrinkled and brown! Now lemons here are usually about $0.33 each or you can buy a 5 lb bag for about $2. Since I hate spending that much on one little lemon I usually buy the bag. I always ask myself tho what kind of savings it is when I do not use them? So I wanted to save this money saving info here where I would be sure to use it! Hope it works well for you too!

    A light and delicious fast fix meal that is easy on the waist and the pocketbook! This comes together very fast and will fill you up with just a few tasty but healthy ingredients. To me this dish seems like a beautiful marriage between Italian and Southern cooking. Hope you enjoy! PS: If you use a vegetarian 'chicken' broth this will be completely vegetarian friendly! Skip the parm or use a vegan parm and you have a vegan friendly dish! The portion is very generous! Adjust time if you are using more tender greens so they are not over cooked.

    After watching an episode of Food Network's Diner's, Drive Ins and Dives. My dh begged me to find the recipe. Since they only gave out ingredients on the show, but not quantities I googled to no avail. Never fear, Cap'n Mama's Kitchen went to work and came up with her own recipe! The French Toast is sweet on its own so skip the syrup here and top with some fresh fruit, flavored yogurt, a sprinkle of powdered sugar or other topping. Hope you enjoy!

    This is something I whipped up last night in my attempt to eat healthier! This makes a soup that very thick with vegetables and leaves you feeling full and satisfied. If you want a soup that is thinner just add more broth. This would be a great soup for a brunch or dinner party as it can be completed and left to simmer until you are ready to serve.
