Started with a Rachael Ray recipe that looked amazing but very high fat and calories! Gave it a much needed fat and calorie makeover and this is how it ended up. It isn't a diet dish but much healthier than the original. Hope you enjoy! For the FULL fat and calorie version please see http://rachaelrayshow.com/food/recipes/spaghetti-artichokes-and-tuna/ Please use the best quality canned tuna you can afford. It makes all the difference! Also remember to buy sustainable! :)

    Recipe #490293

We had a bumper crop of garlic this year and I drove myself nuts trying to find the best way to preserve the flavor all year! I tried roasting it but that didn't work for all recipes. I worried about spoilage and botulism when stored in oil. I read that storing in vinegar gives an acidic flavor to some recipes! Ugh! I came across this method an an agriculture site! Not only was this easy from start to finish it was convenient too! The only real work involved is peeling the garlic but that went fast while watching a show of tv or maybe even visiting with a friend- who can share the job! The system requires an amount of garlic so I used 1 head but use as much garlic as you like. Of course, there is no substitute for the flavor and texture of fresh, raw garlic! I found that this method preserves the flavor best imho. Enjoy!

    Recipe #486771

Money saving and oh so easy! Here is how to roast any type of pepper or any variety of chile whether sweet or hot! Roasting your own peppers and chiles allows you to control the quality of the vegetables used and whether or not things like salt and oils are added! You can easily increase the amount of peppers or chiles you are roasting. (Food.com required an amount but you can use more or less) Great way to cash in when peppers and chiles on are sale in your area or when you grow them in your own garden! Even more control over the quality! Enjoy!

    Recipe #485821

Bread and butter type pickles made with yellow crookneck squash rather than cucumbers! You could use zucchini but the yellow squash looks so much prettier. A great way to use up that garden bounty and savor the taste of summer all year long! Can use all red or all green bell peppers if you prefer.

Great simple yet tasty recipe that let's you get out of the kitchen and your family to the dinner table FAST! Great summer meal when you don't want to heat up the kitchen! Great way to hide some veggies! Consider adding some chopped zucchini or mushrooms to the sauce! Serve with a simple salad and maybe some crusty bread and you have a meal that will surely become a regular! (Note: 5 oz frozen spinach is half a box. Also, stuffed pasta amounts vary depending on fresh, frozen, brand etc... Use recommended amount per serving as listed on package if yours is different from what is listed here.)

    Recipe #452614

    Recipe #424635

Anasazi beans are so pretty! Imagine a bean that has the coloring of a paint horse! They also cook up faster than other beans and have a pleasant almost sweet flavor.

    Recipe #416312

A piece of ham, a ham hock, or bacon can be added to the beans, but they are delicious without meat. If the beans need thickening, mash a cupful and put them back in the saucepan. To make frijoles refritos (refried beans), mash all of the beans by hand or in a processor and fry them in vegetable oil in small batches. Recipe #410320

Recently I found a bunch of "recipes" for using up those lemons that always seem to live in my veggie drawer until they are wrinkled and brown! Now lemons here are usually about $0.33 each or you can buy a 5 lb bag for about $2. Since I hate spending that much on one little lemon I usually buy the bag. I always ask myself tho what kind of savings it is when I do not use them? So I wanted to save this money saving info here where I would be sure to use it! Hope it works well for you too!

    Recipe #407779

A light and delicious fast fix meal that is easy on the waist and the pocketbook! This comes together very fast and will fill you up with just a few tasty but healthy ingredients. The quantity listed leaves you with a soupy bright bowl of my. You could add another batch of kale iif you like, there is that much broth. Also great with all kinds of beans. To me this dish seems like a beautiful marriage between Italian and Southern cooking. Hope you enjoy! PS: If you use a vegetarian 'chicken' broth this will be completely vegetarian friendly! Skip the parm or use a vegan parm and you have a vegan friendly dish! The portion is very generous! Adjust time if you are using more tender greens so they are not over cooked.

    Recipe #406826

After watching an episode of Food Network's Diner's, Drive Ins and Dives. My dh begged me to find the recipe. Since they only gave out ingredients on the show, but not quantities I googled to no avail. Never fear, Cap'n Mama's Kitchen went to work and came up with her own recipe! The French Toast is sweet on its own so skip the syrup here and top with some fresh fruit, flavored yogurt, a sprinkle of powdered sugar or other topping. Hope you enjoy!

    Recipe #406448

I recently discovered how wonderful butternut squash fries are. So I have been experimenting with different recipes and really like this one that I created. I really enjoy this recipe creation and am pleased with the lower fat and calorie content. Hope you enjoy these little gems of deliciousness as much as I do!

    Recipe #402907

This is something I whipped up last night in my attempt to eat healthier! This makes a soup that very thick with vegetables and leaves you feeling full and satisfied. If you want a soup that is thinner just add more broth. This would be a great soup for a brunch or dinner party as it can be completed and left to simmer until you are ready to serve.
