    I modified a full-fat southern tomato pie recipe to have more flavor (bring on the herbs!) and way less fat and calories. Since I'm now pregnant for the second time and craving tomatoes again, this dish has really hit the spot! Super easy, and you can vary the add-ins--crumbled bacon, onions, different kinds of cheese, etc work well.

    Last night we ate dinner with some friends of ours, and our friend Wade made this for dessert. It was TO DIE FOR and the almost the whole pan got gobbled up! He doubled the recipe, but I'm posting the original "single" version. The sprite and sugar makes an awesome glaze in the bottom of the pan that you can pour over the dumplings. Yum!

    So good! I made for supper the other night and we both loved it. Used regular nonfat yogurt instead of the Greek yogurt/sour cream, but I strained it so that it was good and thick like the Greek kind. Also, I just use cooking spray instead of the olive oil, and Cavender's Greek seasoning is awesome on the chicken, peppers, and onions. Dill is great in the tzaziki sauce, too.     This is from Sunset magazine. I tweaked it a tad, adding more veggies and herbs, so that it has only about 75 cals per ladle, which I think is about a cup. I got 15 ladles out of the pot. You could make croutons out of french bread and put that on top, but I omitted that for this version to save on carbs and cals. Really good! I made a huge pot and have been bringing it to work every day.

    This is a super popular salad at a local restaurant. I've looked for the recipe for ages,and an blog finally posted it! It is VERY easy, it just looks like it takes longer than it does because of the roastinga nd blanching. Prep time is mostly letting the beets roast and letting the salad stand.
