    Basic Carrot Muffins
    Handle
    3 Reviews |  By Saturn

The original recipe is in the Mostly Muffins Cookbook from Company's Coming. I made them today and they were wonderful. I made a few alterations to their version and it was so good that that is the one that I am posting. ;)

    Sticky Chicky

    13 Reviews |  By Saturn

The original recipe was in "Eat, Shrink and Be Merry" by Janet and Greta Podleski. I have tweaked it a tiny bit for my family's tastes. We all loved this. It is a bit of a nuisance to have to pour off the sauce at the end there, but it is SO worth it! I love this served over white rice.

The kids and I went on a sampling spree one time in Sam's Club. One gentleman was offering up these little bites of heaven. All three kids got up the nerve to try them. And all three kids wanted to go back for seconds! First time we had ever had prosciutto and we loved it. The gentleman was so impressed that all three of my kids enjoyed it, that he gave me the recipe so that I could make my own! Whether it is a fancy holiday party or a Superbowl party, these would go great!

This is what I came up with in order to create a smoothie for my hand crank blender. If you use a hand crank blender, it will have chunky bits in it. The bits add to the taste value in my opinion!

I eat this frequently for my snacks. This makes a LOT. I make it in the biggest bowl I own and store it in the fridge. That way it is always ready when I want a snack.

    Zesty Chicken Sauté

In a recent Cookbook Swap, I received some STELLAR cookbooks from Chef #22015. This recipe is from one of them. "Cheap. Fast. Good!" by Beverly Mills and Alicia Ross. What a wonderful book! This recipe is now one of my favourites. The chicken is perfectly spiced, in my opinion. I love the ease of preparation! You may need to increase the spice mixture though (if you like it thick like I do!). I made up a batch of the spices and when it was gone, I simply made up another half recipe of it. Worked out perfectly with no waste!

    Lemon Coconut Muffins
    Handle
    17 Reviews |  By Saturn

Adapted from Company's Coming - Mostly Muffins. The batter is a nice, fluffy, light batter. It scoops into the muffin cups easily. The final result is a touch crumbly but still tastes WONDERFUL. If you would like to, you can omit the oatmeal and increase the coconut by the 1/2 cup. That is how the original recipe was listed but I tried to make it a little lower in fat by decreasing the coconut.

    Seasoned Breadcrumbs

This is our all-purpose recipe for breadcrumbs. We have used these to coat chicken and pork chops. We also use them in any savory recipe that calls for breadcrumbs. My fiance and I work this recipe together. I gather the spices and he operates the hand processor.

    4 Reviews |  By Saturn

My Mom used to come to the school and make gingerbread outhouses with the kids in our class. She did this for all three of us kids. (She would use this recipe but would change the measurements a fair bit) It was awesome. This is the recipe that she has used for YEARS. I am not sure where she got the recipe from originally though.

This is adapted from the Company's Coming Appetizers cookbook. These are a great addition to any appetizer tray. They are easily recognized and readily welcomed!

    14 Reviews |  By Saturn

These are some cookies that I made for my SIL when she was having issues with fibre in her diet. She was encouraged to have oatmeal and so I tried to find her a "good" oatmeal cookie. This was attempt number two. This recipe is adapted from The Fannie Farmer Cookbook. I have included two versions of a great cookie. When I make the cowboy cookies, I make them BIG.

    Hot Sausage and Mozzarella Roll
    Handle
    26 Reviews |  By Saturn

This is, hands-down, my favourite dish in my whole life! I can't pin point why, it just is. I used to love watching Mom prepare the dough. She can really work wonders with yeast dough. I eat mine with ketchup on top. This could easily be altered to fit into any ones tastes: Use your favourite sausages, add spices to the meat, add spices to the dough, sprinkle spices on top of the dough... endless opportunities! **Plan ahead, the sausage needs to cool. Chilling time for the sausage is not included.

Apple, Bologna and Cheese! I love a good bologna and cheese sandwich. I also love apples with cheese. So the other day, I put them together.

    R U Chicken
    Handle
    4 Reviews |  By Saturn

R U Chicken stands for Rice Under Chicken. This was a submission to RSC #8. When it was a contest recipe, there was a pepper chutney that went along with it. As it was not to the tastes of the members of my family, we chose to delete that portion of the recipe. I would suggest to go with Susie D's suggestion and serve with salsa and/or sour cream. I agree that it may need "something".

I wanted something fudge-y. But I wasn't in the mood for plain fudge. I don't like nuts in my fudge so I got inventive. The way they are wrapped in my photo was my 6 y.o. son's idea. I think these would be great on a platter with a whole bunch of other cookies for Christmas or something like that.

This is from a REALLY old edition of Reader's Digest. I request this for my birthday instead of a cake. I think it is divine. Very rich though, beware! I usually omit the nuts and it still turns out just fine. (Cook time is chill time)

This is my Mom's recipe. She created it many years ago and it is still a favourite to this day. We eat it while it is still warm. This is the only way I will eat pudding now. My sons just go nuts for this! Custard powder may be in the British import section or in with the pudding mixes and such in the grocery store.
