This is a great summer salad. It can be served in a tomato, or on a croissant, bagel,toast or bread for a sandwich. Very quick to make however you decide to serve it.
I chill the ingredients before hand to save time afterwards.
Trying several corn chowders, I decided to try to come up with one with a little more pazazz. Atfer many errors, I developed this hearty corn chowder. I use Jimmy Dean or Williams brands of hot sausage to spice this soup up a bit. My husband, who's not much of a soup eater, even asks for this soup on cold fall and winter days. I usually serve it with crusty french bread.
This is one of those recipes that is usually better the next day after the flavors all meld together. Very quick and easy to make your own by adding or subtracting ingredients. My husband doesn't like really hot food so i use original RoTel tomatoes when he's eating this - if it's just me I go with the hot or extra hot. Great with hot rolls and a vegetable.
This was my Mom's recipe, it takes me back whenever I make it. I use a 2 egg to 1 medium potato ratio, and we like it kind of juicy, so you may have to adjust the salad dressing if you like your potato salad more dry. It's very easy to multiply for larger groups.
This is one of my favorite salads that I had to modify since I became more health and weight conscious. I find that Kraft Free Zesty Italian fat free dressing gives it a little more zip. 0 point value for Weight Watchers.
First cousin to the Cheese Frenchee. Served at Kings Food Host in Omaha and Lincoln Nebraska in the 1960's. Now you can get them at Don and Millies in Omana and Lincoln. (Tuna only available during lent)
Good salad. I especally like it in the summer when I need something quick, easy and fillimg. Very easy to multiply or divide if you need more or not so much. I like to use different shaped pastas to make it a little more interesting each time.
I needed a sweet, Weight Watcher friendly salad for the up coming Memorial Day holiday and came up with my own version of my Mom's Waldorf salad. I left out the marshmallows and nuts, but, they can be easily added if you think it needs a little extra umph. It couldn't be much easier to make. I hope you like it.
I got this at my WW meeting. The nice thing about this is that you can use any combination of pudding and jello and (most) fruits that you want. I've also used frozen no sugar added raspberries, and strawberries and left out the fruit cocktail - this recipe is only limited by your imagination!! Oh - and the best part is it's only 1 point for a whole cup!!
I modified this recipe from one I got at a WW meeting. 4 points for the whole pie - 1 point per serving. It can be put in a low fat graham cracker crust but don't forget to count the points.
I'M MODIFYING THIS RECIPE BECAUSE I'VE FOUND THAT I LIKE IT BETTER IF I USE A LITTLE MORE WATER AND IT'S EASIER TO SPREAD IN THE PIE PLATE IF YOU ADD THE STRAWBERRIES TO THE SAUCE BEFORE HAND. THIS DOESN'T CHANGE THE POINT VALUE. RM
