    Delicious on a hot summer night. You can make it super simple and quick by using just shredded lettuce with the quickly boiled pork slices on top and adding sesame or ponzu dipping sauce. That's delicious, too, but taking just a little more time with the salad and maybe even the sauce makes it even better. This is what I did.

    If you can get burdock root (gobou in Japanese) where you are, you can try this wonderful recipe inspired by this one https://en.cookpad.com/recipe/1772449 (English) http://cookpad.com/recipe/1772449 (Japanese). The original recipe was to be served over rice, but since I didn't have enough left over rice, I fried up some cabbage with the rice to make it stretch and added the rest on top. It was so good that I will probably always make it that way. You can go with just rice, no cabbage, though!

    I threw this together on a warm night when I didn't feel like cooking and wanted something cool and healthy but also filling. I was amazed at how low calorie this turned out and also how much I enjoyed it. I hope you do, too! You can easily substitute the pitas with tortillas to make these more like wraps, and there's plenty of flexibility to add or subtract ingredients (like maybe red onion or fresh basil for example - warmed up with a little feta cheese melted inside is not at all bad, either, I've learned). With the 4 servings, each serving will either stuff a half of a pita super full or be just enough for 1 whole pita cut in two filled not quite so full. Your choice.

    A fast and simple, fresh and healthy summertime (or anytime) snack or part of a meal. There is plenty of room for variation and experimentation, but just like this turned out pretty darn yummy. Low-fat or fat-free cottage cheese work just fine, too. Easily doubled, tripled, etc.

    Super cheap if you tend to keep garlic and olive oil on hand at all times like I do and can find a can of clams for more like $0.99 instead of $2.50 (luckily, I can at one of the cheaper grocery stores). If not, it's still worth it. I keep parsley frozen flat in the freezer and just break off a piece to add, but you can go with anything along the lines of the basil, Italian seasoning, parsley family, really - very versatile that way. Mix and match spices or even oils, add milk or don't, and it will still be delicious and fast. Aiming for healthier? Excellent over whole wheat pasta, too!
