    Cucumber Tomato Salad

    This was one of the staples in my family growing up. I believe it was passed down from my Grandma. Simple to make with cucumber, tomato, mayo & salt. Tastes great, goes well with chicken dishes and hamburger!

    There are tons of salsas out there, but I haven't found one exactly like mine. (Similar to pico de gallo I guess.) Do yourself a favor and find authentic Mexican chips from a local restaurant to go with this! Can't beat the taste. :) Can spice this up if you want, I do this for my bf, just add some cayenne to the mix! I love this so much I can eat half the bowl in one sitting!!

    Just open up some cans, heat through and serve! Not spicy but you can spice it up if you wish. Has Campbell's (Formerly Franko American) Spaghetti in it. Servings depends on your bowl...with only 2 people in our house we eat up half the pot in a couple of days and like to freeze the other half for when we want some.

    I found this at allrecipes.com and have made it a bunch of times this summer with beautiful green beans. Even my bf who doesn't care for green beans will eat this! The recipe says you can also try it with broccoli instead of the beans. (Sometimes I use more chicken broth, just depends on how fast you want them done, and more or less flavor.)

    My favorite meatloaf from my mom's recipe. Ground beef, turkey sausage,(make sure it is turkey sausage! if you do get ground turkey like I did on accident once, just use extra spices for more flavor!) crackers, eggs, ketchup, woo sauce, onions, garlic powder. Serving size depends on how much you like it! It's good leftover the next day on sandwiches, too. Also, you could divide this mix up and add onion, green pepper, or other veggies to each person's liking and put in small loaf pans. Sometimes I make this into two loaves and save the second one for another day or even freeze it. (Just cut the bake time down or it'll burn!)

    I adapted this dish from an online community to please my tastes. You can also use sour cream if you don't have cream cheese on hand. For quickness I also use minced garlic from a jar. I love garlic pepper salt, you should be able to find this but if not you can add them individually.
