    This is Italian not because I have used Italian mushrooms in the recipe. It was inspired by a fantastic mushroom pate I eat last summer while on holiday in Umbria. This is extremely easy to make I recommended serving it heaped on warm wholemeal toast. In my opinion this makes an Ideal starter, snack, lunch or even breakfast.

    Fast food seems to generally have a reputation for being unhealthy. There is, of course, no reason why this should be true. By definition the veggie-burger is seen as a great healthy alternative to meat. However, they can be enjoyed for their own sake and not just sandwiched between a bun. The inspiration for this recipe is taken from Middle-Eastern cuisine. I also hope that it is very easy and quick to make as well as tasty.

    There is nothing more traditional for a vegetarian than a nut roast! It is perfect on Sunday with vegetables, crispy roast potatoes and onion gravy. Of course, at Christmas, when the carnivores are tucking into their turkey, every self-respecting vegetarian or vegan is sitting down to their nut roast with trimmings. I know there are plenty of nut roast recipes out there, but I thought I would develop my own anyway. All the ingredients in this recipe are readily available and it is easy to make.
