This is a great side dish that goes well with beef, chicken, pork or fish. It's easy to make too! I found this in a Taste of Home cookbook several years ago, the original recipe calls for 1 1/2 cups of cooked ham instead of bacon, but I always have bacon on hand, so that's what I use. I also add in mozzarella cheese to make the potatoes a little more creamy.
This yummy recipe came from my husband's grandma Rosemary. This is a really easy, quick recipe to make, and it turns out moist every time. I'm not a big fan of pumpkin pie but after tasting this cake I had to have the recipe.
My grandmother Lucille (we all called her Mammaw) used to make this wonderful zucchini bread when I was growing up. I ate this every time she fixed it, thinking it was banana bread. When I was a teenager and became interested in cooking, I asked her for the recipe and could not believe that this was made with zucchini! If they would have told me that as a child, I probably never would have even tried it. It is one of my favorite desserts to make, it is simple, and it gets rave reviews every time.
