    Cocoa Brownies W/ Honey and Applesauce

    For you chocolate freaks that want to get your chocolate fix on and still feel healthy about it. I created this recipe using raw honey and applesauce. You can also use homemade pear sauce and you might experiment with a mix of bananas, applesauce and pears. I have not tried it with other flours but you might experiment with that too. I top it with a pudding made from bananas, avocadoes, cacao powder and honey (in the food processor). The pudding tastes best if allowed to rest overnight. YUUMMM! Because it's fairly healthy, I like to serve with a brunch.

For those of you who don't already know, unsweetened cocoa is rich in antioxidants and high in fiber. Peanut butter is cholesterol-free, rich in vitamin E, niacin and iron. I buy 16 0z to-go cups w/ lids at Costco and I enjoy one of these on a morning where I am very rushed and need something hot and filling and healthy calories. I created this for myself after I read that cinnamon helps prevent or retard diabetes and is good for people who already have it (it runs in my family).
