This tasty recipe was given to me by Impera_Magna in response to a request for recipes containing loquats. I used presliced boneless pork loin chops instead of a whole tenderloin and substituted Splenda for the sugar. The results were fantastic! The Madeira gives the fruit sauce an amazing flavor.
For those who have never had loquats, they are a small subtropical fruit that taste similar to a plum.
This is one of my favorite fall recipes. It is one of my mother's recipes. I love to make it for Thanksgiving and Christmas get togethers. It makes the house smell wonderful too. If you don't want the cider too sweet, you can leave out the brown sugar and it is still very good.
Gumbo you can make on a work day. I prepare all ingredients the night before. Put everything except water and shrimp together and refrigerate. In the morning, put ingredients in the crock pot and add water.
Be patient with the roux, it takes time. If you burn it, you will ruin your gumbo.
