This is a great, spicy rice. The tomato boullion and cumin are the keys. If you
leave them out you'll have tomatoes added to rice. Blech! When I'm not in a
spicy mood I exchange the Rotel for regular canned tomatoes and use only half of
a 14.5 oz. can with juice.
Don't drink the wine while your making this soup. I once drank the wine while I was cooking and added too much cheese. Oops! It took me over 12 years to find a recipe. I got this from All Recipes and messed with it to get it to MY liking.
A made over Hungarian Goulash, less the Hungarian Paprika. Corn, parsley, and red bell pepper added for color. I typically do not measure anything nor do I really know how many it serves or what is a serving. If you think it needs more of something then add it!
I took Mom's basic chicken and rice and dressed it up with fresh vegetables and fresh herbs. For best tasting results grilling the chicken breast is recommended, but definitely not necessary. This is written for a "lower"-sodium and healthier diet. The serving portions are really to your own liking. I never counted how many it serves to be honest. Enjoy!
My mother said she didn't get this recipe with her Turbo Pan Cooker. I figured since she was so deprived that there must be others. This is an excellent recipe. I'm sure it can be used in any pan that is a steamer pan.
