Here's a healthy granola that doesn't have a lot of oil, but has a lot of good-for-you ingredients in it. It's good sprinkled over vanilla yogurt or with milk -- or out of hand as I walk through the kitchen! I bake it at 325 for about 40 minutes, but my oven is going wonky, so I put the recipes original instructions here. You can substitute orange or cranberry juice for the apple juice. I've used almond butter instead of peanut and it turned out great. My picture shows goji berries and dried blueberries instead of raisins.
This originally called for 2 cans of black beans, but my kids aren't huge fans of black beans so I changed it for them. You can assemble this in advance and put it in the crock stoneware in the fridge overnight.

I think next time I'd try this with a little less sugar and maybe sub part of the butter with peanut butter. I threw in a handful of mini semisweet chocolate chips, but I don't really think it added anything to the bars. They were very soft, chewy, and yummy.
From THE 150 BEST AMERICAN RECIPES. When I made these, I left out half the butter and sugar in the filling, and all of the butter in the topping and they were still absolutely amazing. I used skim milk because that's all I had, and light butter in the filling. They were well worth making!! Add 1 1/2 cups chopped walnuts and 1 1/2 cups raisins in the filling stage if desired.

This is especially good with vanilla ice cream on the side. It came from a cookbook, but I can't remember which. Use root beer schnapps in the cake for a more pronounced flavor. Do not use diet root beer.
I got this from another website and everyone in my family liked it. I thought it was delicious and very filling. I use the "Mexican style" type diced tomatoes. For a different taste, use Parmesan or low fat cheddar on top.
This is a bit of work to make, but the reaction of your guests will be worth it. Three members of my family immediately announced that they too wanted this cake when their birthdays came around. I made the mousse buttercream with a hand mixer and it took FOREVER, so don't make it unless you have a stand mixer.
