1/4 cup of this (made as written) is only 70 calories!!! Use veggies to dip and you could have two servings without feeling guilty! They key is fresh garlic. Don't expect it to be rich like the full-fat recipe, but for as light as it is, the taste is darn good!
I made this when I was coming down with cold symptoms and wanted a comforting soup that I could taste despite my stuffy nose. I thought it was geat so I thought I'd share. Please note: There is NO substitution for smoked paprika. Servings are totally guessed.
This recipe uses canned mushrooms to speed up the cooking time. Make sure the can is 16 oz DRY weight of mushroom pieces. If you can't find those large cans, just by small ones to equal 16 oz DRY weight.
