This is a family recipe - made the day before and eaten at all family gatherings. It's typically eaten as a dip with pretzels. I married into this family - so don't know where the recipe came from - but it is always enjoyed.
Adapted from cooking light recipe. Honestly one of the best dinners I've EVER made. Saving here with the adjustments I made... sometime soon I'm going to sub out the chicken for shrimp and use fish stock instead of chicken stock. I put all of this on top of (thai) rice noodles. 4 oz noodles and all the veg and chicken makes 2 HUGE servings. 16 WW points each. Less chicken or sub shrimp would reduce points...
This is one of my favorite recipe's from my Mom. Used to ask her to make it for me every birthday - as the birthday child got to choose. Still making it...for my family now! Not sure of the source - feel free to adjust to your liking!
Got this from my mom in 1988 and have been making it since. It is an often requested recipe. No idea where mom got it - maybe the newspaper? It is similar to those out on the website, but doesn't match perfectly and we are pretty happy with this recipe - so maybe others will be too?
I cobbled this together from a couple of recipes I found on the internet. I have way too many peppers from my CSA and I love tamales and southwestern cuisine, so I'm going to make this today and will let you know how it goes, and adjust... So...to be perfectly honest, we like the other recipe I have for stuffed peppers - and I use Quinoa, instead of rice. If you make this - tweak it some more and let me know the updates!
I got this recipe from Bon Appetit, but they didn't have it published on their web site, so I'm putting it here for safe keeping. It was in the 'request' section where readers write in and ask for a recipe from a location / restaurant they'd eaten at. This one comes from the Grace Bay Club in Turks and Caicos. It looks quite good - so I'm hoping some of us enjoy this! UPDATE - I made these this weekend and they were good and went over big at a party. I made a double batch and note the puff pastry at my grocery was $4.99 ea - so for a double batch - that is 3 packages...so not an inexpensive appetizer for a party... Many liked them - but I thought next time I might see about using pie pastry instead of the puff pastry and perhaps adding a bit of cheese or maybe potato inside of the empenadas? The dip was great - even with tortilla chips too.... :)
I made a recipe like this - based on another on this site. I made it as enchiladas but with the low fat nature and the corn tortillas I figured it would be best as a casserole next time. The flavors were good - so I'm adding it here for safe keeping and possibly adjustments as I try it as a casserole next time. As it was low-fat and low carbs - I've figured it at 10 WW points plus for 1/6th of the pan.
