Blue cheese dressing lovers rejoice!! This dressing is easy on your waistline, but is creamy, thick, and satisfying. I usually make a double or triple batch for the week, as we eat a ton of salad. Make it ahead of time, because it's better if you let it sit in the fridge overnight. From "Healthy in a Hurry" by Jim Romanoff.
A more healthy version of this would be with chopped ham and 4 TBSP extra virgin olive oil, or simply omit the meat all together for a more traditional taste (you will still need the oil). Great for Sunday breakfast, or an easy dinner side!
This can easily be adapted to whatever you have on hand. Substitute milk for juice, or peaches and raspberries for the strawberries and bananas. I purposly don't add sweeteners, because the juice is naturally sweet, but also because I like the tartness of the fruit. Yummy for those of you who need energy in the morning, but hate eating breakfast (like me!).
