    One of my wife's co-workers made this for a holiday party and she loved it so much that she got a copy of the recipe to make at home. Since I use to consolidate all of my dishes (makes shopping so much easier) it became my task to track down the original recipe and transfer it here. I found the original at so credit to them.

    An easy way to make a delicious pork loin in your cast iron skillet complete with it's own gravy!. I originally found this online (don't remember where) and have made a few adjustments as I went along to get it where I wanted it. The weight of the loin isn't really important since you're going to cook to an internal temperature and the size of your skillet will be the determining factor. I.E. you need to be able to get the lid on your skillet while it's in the oven! I hope you enjoy!

    The original version of this recipe was passed down from my Grandmother back in Missouri. I've made some improvements. I'll let you figure out what you want to put it on; biscuits are my favorite but this is great on just about anything you might want to put gravy on. I also use Jimmy Dean Sage Sausage and add a pinch of crushed red pepper flakes but those are entirely optional.

    This recipe is always a huge hit whenever I make it. Cooking in the cast iron skillet makes this recipe nice and crispy on the outside but moist and tasty on the inside. Use different peppers if you don't like Jalapenos.
