Sweet potato gives these waffles a nice golden peach color and wonderful flavour. They are crispy on the outside and soft in the inside. Sweet potatoes provide almost half the recommened daily allowance of Vitamin C and two to five times the recommened amount of Beta Carotene!
This delicious chocolately fudge, has mashed potato in it!! My mom has made this many times when company came over, and not once has anyone guessed that mashed potatoes were in this fudge. We have often omitted the peanuts.

These are moist brownie like bars with just the right amount of chocolate and peanuts. This recipe was originally high fat, but I successfully substitute applesauce for most of the margarine. Excellent served warm, although still very good cool.
Don't let the name turn you off! This soup has a nice thick consistency that is nice and flavorful. A perfect blend of vegetables, legumes and grains. A flavourful cream cheese dip based sauce encasing plump cheese tortellini and a mixture of fresh vegetables. The original recipe called for chicken, but we have substituted shrimp and scallops many times, which makes it just as good. You may also omit the chicken/seafood to make it part of a vegetarian meal.
Delicious fluffy yet heavy sweet potato rolls. The whole wheat flour and oat bran add extra fibre without being obvious because of the peach/orangey color of these buns.
