    These Norwegian Potato Pancakes can either be served for breakfast of dessert. The potatoes have to be mashed and cooled so do this ahead of time. (not included in time to make)

    These hot cross buns shaped as bunnies are very fun for the kids, and very easy to shape. My mom always makes these for us for breakfast on Easter morning. She used to ice our initial with icing on the stomach of the bunny. The glaze in this recipe is optional - we never bother. These are perfect for kids to help make, and are a sweet treat. Use whatever kind of chocolate wafers you prefer.     Wonderful carrot bran muffins that are low in fat, yet, I find, taste almost buttery. They have a wonderful moist yet fluffy texture, and not too sweet delicious cinnamon flavour and aroma. The batter is quite thin, which creates smooth domed muffin tops. I have always made these with the soured milk instead of buttermilk. And yes, there really is 1 tbsp cinnamon in this recipe, it is not a typo!     This is a deliciously creamy yet low-fat potato salad. The french dressing plus the mayo and yogurt adds some tang and colour to the salad. I have never felt the need to add any salt to this recipe. Plan ahead, this salad needs 2x4 hours chill time.
