    I'm staying away from wheat, but wanted a nice white sauce. All the others I have seen were thin or too sweet. This one is rich, creamy, and has a great flavor. Replaces white sauce in casseroles and tetrazzinis. Can be used as a base for cream of mushroom soup, too. Add spices you want to create the flavor you need. All spices listed are optional--I use this as the sauce for my chicken and rice bake.

    I made this for my MIL when I forgot to turn on the oven for the turkey roast...It was great!! This was a quick save, and the idea came from a dish she had prepared from a 60's vintage book. The original was more involved, but this tasted just as good.

    My stepmother is a North Lebanon native, and her version of this is a secret, but this recipe is just as good. It's nice and hearty, and good for toddlers and babies. Pureed, it's called Mjaddara, and the onions are still tender, and mixed in. From the Sahtain cookbook.

    My son's going through a meatball phase, but I don't like all the salt and corn syrup in the canned kind. This sauce is no-salt-added, and has a touch of cane sugar to help the taste. I boil the meatballs in salt-free homemade chicken stock, but you can use plain water, too. Tasty for adults, too! Just edit spices as needed, too. I put minimum amounts for small children.

    This is a better version of a granola cookie recipe. It uses Sucanat (an unrefined sweetener--you can find it at Wegmans or at health food stores) and Hemp Plus granola, which is a lighter granola with puffs in it, and flaxseed. (Don't worry, it's safe to eat, even for children). These cook up light and airy, and taste heavenly. Note: they're a little less healthy if you eat the whole batch...*burp*
