    These are incredible, and easy. Starts with the crockpot, ends under the broiler. Tastes better than a deli sub--and that's coming from my husband! Kids love them too. Have a knife and fork ready, since these are pretty big. It looks long and involved, but it really, really isn't!

    Shortnin' Bread, Tennessee Style.

    I was shocked to not find Shortnin' Bread here. So, here it is, antebellum style, and it sounds delicious. There is no shortening in here, since shortening once referred to any type of cooking fat. The original shortnin' bread, according to some, was a savory cornbread layered with bacon. It is now categorized as a sweet dessert, and encompasses all from Scottish Shortbread to regular sugar cookies. This, however, is one of the original recipes from pre-war Tennessee. I'm sure all "mama's little babies" will love this. Thanks to Margaret Nichol.

    A rich and creamy dish using imitation crab and flounder--but you can sub in any flat mild fish. Kind of like Newburg and baked fish all in one dish. Measurements are approximate, since this was thrown together in a hurry. Salt and pepper, along with other spices or fresh onion would be good with it, but it is nice as it is, too. Comforting and filling, and my toddler even ate some!!

    A good way to sneak in veggies. You process them down really small so they can't say "eew!" I use multi-grain pasta (Barilla Plus is good), and if your kid doesn't like green in their food, you can sub wax beans and carrots for the green beans and spinach. You can increase the amounts of vegetables as needed, but that might be too risky... I even liked it, and my husband said, "Damn, I'd eat this, too!!"

    Adapted from the 1961 Better Homes & Gardens Dessert Cookbook, and tweaked for extra goodness. It's incredibly easy, and tastes just as good as regular cheesecake. Only uses 8 ounces of cream cheese, so it's convenient, too.
