    I bought a Pace Picante Sauce cookbook about 15 years ago. This is my adaptation of a soup we have fallen in love with in our family!!! I've served it so many times to large crowds. Guests never miss the meat, and they love it because they can tailor it to their own tastes. As the cook, *I* love it because it's healthy, it's a SNAP to prepare and the taste is supreme!!!

    These are so FAST and simple to put together and somehow, when frozen, they taste a lot like cookie dough. Amazingly, these come together nicely when stirring. You will be able to roll them into balls without chilling the dough first. Bet ya can't eat just one!!!! *I'm editing to reflect reviews: You *do* need to like peanut butter as there's no getting around that flavor in this recipe.     These make the most **adorable** little treats! I make these for my children to take to preschool and the little ones just go crazy over them! And the flavor is tops, too!     We were served this at a dinner party. The host obtained the recipe from a restaurant I believe is called "Miguel's Cocina". This luscious sauce is perfect as a dip for fresh veggies, tortilla chips or better yet, potato chips! It's also an irresistible topping for baked potatoes. Because it's simply a flavored, upscale white sauce, the sky's the limit here! For chicken base, I use the "paste" type soup base, and also add a pinch of salt to the roux. Adjust the jalapenos and juice to taste.

    This is so, well, smooth and creamy! The recipe is passed down from my mother-in-law. I've seen similar recipes, but none this simple, fast and tasty. It's good on just about everything, but not suitable for decorating. It's just very spreadable. We particularly love it on a refrigerated Jell-o cake during the summer. Also, any flavor of instant pudding is a hit with this one! Our favorites are vanilla, lemon and chocolate. Covers the *top* of a 9x13 cake very well.

    This is NOT an ordinary lettuce salad, but then, I've never liked run-of-the-mill much! Don't let the list of ingredients scare you, as the flavors and textures go well together. My husband and visitors scarfed up every last bit of this! The recipe is from a MOPS (Mothers of Pre-schoolers) cookbook. I've typed it as it is in the cookbook, but I tweaked it as follows when I made it: At the point of adding the "dressing" (marinade) to the salad, I used only enough of the marinade liquid to sufficiently moisten the salad. Prep/cook times include 6 hours for marinating.

    My mom has been making this YUMSTER dish for as long as I can remember, and it's always a hit with EVERYONE! A snap to prepare and delicious to boot! You just can't go wrong with this one! It's good any time of year, and can be made to suit anyone...even kids, as you can adjust the "heat" to taste. Three (15 oz) cans of well-drained whole kernel corn (uncooked) may be substituted for the frozen corn, but my family prefers the taste and texture of the frozen variety. Get ready for recipe requests!
