I don't think I'll be needing dessert after this meal ... You can view the entire menu under my Shared Menus "An April TGIF".

From the 20 Minute Recipe Club ... submitted by by Giada Di Laurentiis from Giada at Home. "The sweetest, best kind of dates are Medjools. They’re large, so they are easy to fill, meaty, and chewy. Stuffed with goat cheese and wrapped in prosciutto, they provide a perfect sweet-salty mouthful in every bite. Serve these with a crisp white wine as the ideal before-dinner tidbit." Haven't tried, but they sound tasty and easy.

From the 20 Minute Supper Club. I found the ingredients in this recipe interesting and want to try it! I'm a sucker for any recipes with blueberries. If using frozen berries, defrost and drain.

    Recipe #420513

Quick and easy. I had bought exactly this amount of asparagus for a family get together that got cancelled. Our vegetarian daughter came home unexpectedly and I was scrambling what to make for supper. Was checking emails and had one from Canadian Living posting meatless dishes for upcoming Earth Day, and this was the first one I clicked on! Added some roasted chicken for DH who like some meat with his meals. Very tasty, so decided to post so I could add to my "vegetarian cookbook" on Zaar.

Got this from a Food and Wine email and posting it as I thought it looked rather interesting. Recipe by Joanne Chang. "Is this an American take on a Vietnamese classic or a Vietnamese take on an American classic? Either way, these spicy burgers topped with Tabasco-spiced mayonnaise, slivers of crunchy pickled carrots and sprigs of cilantro are wonderful." I think I'd opt to try these on the bbq instead of frying ...

from www.waitrose.com Strangely enough, had all these ingredients on hand (I'm trying to use up meat in the freezer!). Actually pretty tasty! I think this sauce could be used in a variety of different dishes.

This is my Mom's recipe and I've never even wanted to try another. Turns out perfect every time, and is a must at Easter to accompany ham. Kids would kill me if I didn't make it!! I always add lots of thinly sliced onion (ratio 4 cups potato, 2 cups onion!), but I'll submit the recipe as is. Not quite sure how to post yield!

This is an old standby for me and I'm planning to make it again for Easter dessert. Angel food cake filled with vanilla pudding, crushed pineapple, strawberries, whipping cream and chopped pecans. Prep time will vary if you make your own cake - mine includes that time. From Soupcon I

Featured in our local paper this weekend. Quote: In the film "Cooking with Stella", Stella's glorious shrimp curry is well known throughout the diplomatic circles of Delhi. It is one of her signature dishes, tart with tamarind and lush with coconut milk. Tarmarind pulp and fresh or frozen curry leaves can be found in South Asian grocery stores. Just as soon as I can purchase curry leaves, I'll be trying this out! I've got all the other ingredients ... Guessing at time and yield.
