    This is an authentic but quick recipe for Jamaican Rice and Peas.This a standby for me I make often.The Scotch Bonnet if left whole will not make the dish hot,just adds flavor.

    For serious gingerbread fans. A dark bread full of wonderful taste and a light texture. The complex flavors rely more on spice than sugar, not too sweet.     A delicious Thai version of salsa. Everyone I make this for loves it. Meant to accompany grilled fish, but you will find many uses for it. I usually add at least twice as much cilantro and double the recipe as guests will eat all of it. It is just as good the next day. I have mistakenly omitted chili-garlic sauce and still tasty. Use a sweet onion like Vidalia or a red onion if unavailable.

    I've been making this for over 10 yrs & it's one of my favorite recipes. Even people not crazy about pumpkin, curry or ethnic foods swoon over this. Great as a main dish over rice or as a side. I do not eat meat so I omit bacon. In that case, don't worry about using unsalted butter. If vegan you can use all oil. If you live in a Latino community look for Calabaza in produce dept, otherwise, Butternut or Hubbard squash works wonderfully as well--don't use anything canned!     Very simple ingredients combine for wonderful flavor. Delicious warm or cold. I love these and don't find it labor intensive, rather rolling the cabbage for me is relaxing! I use brown rice and I do use toothpicks to keep rolls closed. I also mash the chickpeas first as it makes the filling easier to stuff. I also did not peel tomatoes and it was fine. I tweaked this recipe after I tried it, adding easy tips. Make sure to choose a very large cabbage head--better leaves. Make sure you are gentle with removing leaves from hot water as they tear easily. This is from Tess Mallos Complete Middle East Cookbook.

    I love tofu. But this chickpea sandwich is much more satisfying than the typical "mock tuna" salad made with tofu. Sure it is simple, but so delicious and satisfying. This is not my recipe--I got it from another site, changing one or two things. You can add other vegetables, pickles or any of your other favorites to suit your taste.
