This is great on pasta or rice. It's very easy and doesn't use a lot of ingredients. You could even add a can of Cannellini or Pinto beans (drained and rinsed) when you add the tomatoes to make the foundation for a basic sausage stew.

I came across a recipe online that was for a stuffed-crust pizza, and I decided to change the recipe according the ingredients I had on hand. This is a simple way to make pizza, when you don't have a lot ot time.

I found this recipe in a dessert cookbook, and it's close to the lemon cake my BF's cousin makes. She's a pastry chef and always surprises us with a lovely lemon cake now and then.

    Recipe #372195

This is based on a recipe I found in Country Living magazine. I haven't tried this yet, but it looks oh so good! Serve this with some warm dinner rolls or crusty french bread (your choice), and you have a great rustic/hearty dinner. You can down-size this recipe for your family or 1-2 servings.

    Recipe #362266

This was supposed to be made originally with shrimp, but I didn't have any. So, I left out the shrimp and used Tilapia for the fish. The vegies I chose were broccoli and cauliflower. I also made some roasted potatoes for a side dish.

I had leftover sweet cornbread to use one night, and this is what I came up with. I let the cornbread dry a bit, then mixed it with spices. It turned out sooo good, and I served it with beets and mashed potatoes. You can serve it with any vegetable, or it might be good with pasta/rice.

I made this one night to go along side a casserole. I was short options for a vegetable dish, and this is what I came up with. It turned out wonderful. This is for 2 servings. I like to use the leftover cabbage for coleslaw or chopped cabbaged gives a lovely texture to lettuce salads.

This is based on Recipe #350909, and I thought I would try it a bit differently one night. It's done basically the same, just roasted red bell pepper and Provolone cheese on top, instead of mozzarella. Enjoy!

This is something I came up with one night. I love stuffed chicken breast, but I wanted something different. Serve this with vegetables of choice, warm bread and a nice tossed salad. You can leave the italian seasoning and red onion off the top, if you wish, but I thought it nice... just experimenting.

This was very good! I love the taste of olives, onions, mushrooms and garlic in a tomato sauce. When it's paired with the wonderful flavor of chicken, it's delicious! I served this with cornbread.... seems strange, but I had a craving for it that night. My first choice with this would be a good italian bread or buttery, dinner rolls. I ladled this mixture over spiral pasta and had tossed salads on the side. This can also be expanded for potlucks or other occasions. It travels well.

This was a quick dinner I came up with. You can use any white fish. I used tilapia, but I might use haddock or cod next time. For the salsa, all I had on hand was Rotel tomatoes, which turned out good and spicy! You might find the cream cheese a bit weird as an ingredient. If so, you can omit that. This is for one serving, but easy to expand for more. See NOTE at the bottom for another way to prepare.

This is a culmination of many recipes for beef pie I have made over the years. It was put together with ingredients on hand. Some of them you might find strange, but turns out to make a delicious pie. Make sure you let the pie set for 10 minutes, before cutting. Serve with a nice green salad.

This easy recipe was on the back of a polenta bag. It seemed easy, and I loved that it was baked in the oven and not something I had to check constantly. I had this with regular, hot stewed tomatoes that I served along side. What a hearty meal! This would be a great side to almost any meat or vegetable dish. The recipe didn't call for garlic, but I added some garlic powder to mine. Oh, so tasty!

I made this tonight when I wasn't sure what else to make. I used flank steak. This is more appropriate for sandwiches and serve on big, crusty onion rolls. YUM! Instead, we had this on rice... no rolls. :( It came out mighty tasty. It's a semi-homemade recipe, using bottled BBQ sauce. You could also spoon the leftovers over a baked potato or pasta. The recipe can be expanded for more servings or potlucks.

There is a bit of everything in these! I made these using some leftover ground turkey, added hamburger, diced bacon, etc, etc... and it came out delish! Lately, a few of my meals have been this way (not following a recipe to the letter) and giving great results. I will try to put together some ingredients, though they will be approximate. This was made in the crock pot, spooned onto BIG Kaiser rolls and served with Recipe #58801. The recipe could be expanded for larger groups.

This is something I came up with when I wasn't in a meat mood. I love vegies and could very well be a vegetarian, if I didn't like everything so much. This is very easy; just vegies, olive oil and spices. You could have this as a main meal, by itself, with crusty bread/rolls or a side-dish to grilled meat or fish. This could also be done on the grill, see Note.

    Recipe #335492

Great lunch or dinner, if you're craving something on the sweet side and hearty. And, this is good for you! Serve with a small salad or steamed vegies.

This looks like a tasty alternative to traditional devilled eggs. A great appetizer for any get-together.

A great appetizer I came across in one of my Mom's cookbooks.

I took out some leftovers from the freezer. The leftovers were from a crock-pot recipe I made a little over a week ago. I froze the remaining roast in the stock it created. This is a comfort food recipe to the max. Serve with mashed potatoes or french fries for the full effect! Enjoy! Note: This could also be done with beef or chicken.
