Great to serve with BBQ. Easy to prepare, you can fix it and forget it for a few hours.

    Recipe #45388

A wonderful hot drink that can sit all day in your crock pot if you wish. Invite some friends to help drink this.

Most Florida restaurants have their own version of smoked fish dip. It is often served as an appetizer, but I could make a meal with it, if I don't run out of crackers!

This is a replica of a famous dessert served at a restaurant in Santa Fe. The recipe appears long, but includes directions for a 9 inch double crust pie and an optional sauce. You can save time by buying premade crust and skipping the sauce. The pie is a delicious blend of apples, spices, nuts and raisins. It's a local favorite in West Texas and New Mexico.

While in the Keys, we sampled some rum cake. Delicious! Luckily, I found a cookbook with some famous Key West Recipes in it and here was the Rum Cake recipe.

An easy way to prepare this versatile sauce. Enhances the flavour of vegetables, dinner crepes, and egg dishes. My favorite way is to serve it over asparagus.

A nice salad that goes well with chicken or pork. For those trying to have a healthier diet this is a great addition that pleases most palates, even the younger ones.

I had a live in housekeeper who prepared this roast. We called it Chela's Roast, but later learned it was Boliche roast. This recipe is a combination of a half English, half Spanish recipe I wrote down as she cooked the roast and a Cuban Boliche Recipe I found. The roast goes well with any Hispanic rice dish.

I enjoy seafood salad, but could not get it to taste as well as some I'd been served, until I found this recipe. My favorite way to eat this is in avocado halves.

I got this idea from Cuisine at Home, but altered the recipe to produce a moister, cheesier version. This looks like a very fancy side dish, but is actually easy to do. Definately a unique way to serve potatoes.

This is such an elegant and flavorful way to prepare fish. This is from my recipe file of "How to Win a Husband 101". A co-worker shared this recipe and warned me it would "Wow" even those that didn't like fish. I prepared this elegant dish when I was dating my husband. He was really impressed and 13 years later, he still loves this dish. The resulting preparation does not have a strong fish flavor and the combination Mornay like sauce served over a bed of spinach tastes like a restaurant quality dish. I included a shrimp sauce option at the end of the recipe.

This is one of our all time favorite chicken BBQ recipes. The recipe produces a spicy moist, flavorful BBQ chicken. You might say its one of our signature BBQ recipes. The idea for the chicken came out of a bargain bin. The store was selling 3 cookbooks for a dollar and naturally I couldn't pass that up. I found a BBQ recipe that had possibilities. Since we like spicy food we jazzed it up a bit and we got a great BBQ chicken. Prep time includes marinating time.

A recipe from Pappadeaux's restaurants. This is no ordinary dip (see Miller's explanation on dip)It's Cajun Oysters Rockefeller married with cheesy seafood spinach dip, served on garlic toasts.

Here is a nice fall apple recipe. I live in Florida, so I really don't know what a season is.. but I have to go with the majority who claim this is fall. The Tipsy Apple Betty got it's origin from the fact that I have a bottle of Amaretto sitting around and I don't drink the stuff, so I've tried to add it to recipes I've made just to use it up. The Amaretto Corn Beef Hash was a disaster, but this recipe is fabulous! The topping creats a struesal cover for the tender appples, soaking up a nice cocktail of Amaretto and orange juice. The recipe is just as good without the liqueur, so if you don't have a 6 year old bottle hanging around...don't worry!

This is a recipe lent to me by my friend, a Pampered Chef representative. She uses this cake as a demo at her house for her parties. Chocolate cake with a "raspberry pudding." I think it is like eating a giant chocolate truffle!

While my husband was a student, he was bored one day and tuned into a cooking channel. They were demonstrating how to prepare a low fat version of the "Bloomin' Onion" served at Outback Steakhouse and Chilies. When I came home from work, he had this neat little appetizer all prepared. It was so tasty. The only draw back is (as you well know from eating onions) you don't want to jump up and kiss the cook!

My husband and I were at a wedding reception at a very posh country club. He was served the most marvelous fillet mignon there, I opted for the chicken. It was my mission then to find this recipe and make a duplicate. He only allowed me a bite of steak the size of a grape with a small amount of sauce on it (and that was grudgingly). The last place I thought I would find a good steak recipe was Cooking Light, but there it was! Now when we need to impress, we serve this recipe. It tastes like a dish you'd be served at a five-star Hotel.

Some recipes make you go HHMMM!?? Luckily I tried this and it made us go YUM! This isn't the normal combo you'd see on a sandwich, but very tasty! They are quick, easy, and lo cal. Another delight from Cooking Light.
