These are tasty meat pies filled with a spicy sausage and potato filling. The empanada is a staple in Hispanic homes and restaurants. I love them and make a lightened version I found in a magazine.

I love making these spicy corn muffins. My children say the flavor reminds them of Texas. I really enjoy the combination of corn, green chilies, and cheese and this recipe has it all. You can leave out the jalapeno to reduce the spiciness. Inspired by a recipe found in TOH "Qucik Cooking."

If there is such thing as BBQ Green Beans then this is it. The green beans are sauteed with vegetables and bacon, then covered with a tangy sauce. These green beans are zesty, they'll stand up on your plate and shout, "Pick Me." My all time favorite way to prepare green beans.

A treasured find in Southern Living Magazine. Easy and Cheesy, that's the way we like it. You can substitute Cream of Mushroom soup for the Nacho Cheese soup if desired.

Tortilla Soup is so good it tastes complicated, but it's not. It is actually a very easy soup to prepare. My family likes to assemble their own soup. The heart of this soup is a delicious chicken and shrimp base with chopped avocados, cheese and crispy tortilla strips available to top as you like. The kids really like "creating" their own soup with the toppings. I lived in Texas where this is a popular soup, it is a combination of 2 recipes. One recipe came straight from Mexico and one I found in a cookbook.

Oh, the weather outside is frightful, But the kitchen smells delightful, I'm cooking something tropical, Let it snow, Let it Snow, Let it snow This is my son's favorite birthday cake and his birthday is in December, which is not a month you usually make a tropical summer dessert in. Which is why like us, you may just get the urge to go hang ten in your front yard in the middle of winter.. or not.

My favorite way to serve corn for the holidays. It makes a festive side dish and is easy to assemble. I first served this on December 31st, 1999. The green chile adds a southwestern flavor, but it tastes great without.

My mom had an incinerate setting on her oven. That is how she cooked meat. I thought that all meat was some form of carbon based life form, because that is what it tasted like. I have made it my mission to find ways to serve moist and flavorful meat. This is an inspiration born of too much time on my hands and needing to feed picky eaters. If I attach the word Pizza to any recipe it is guaranteed at least a try! The chicken is breaded, topped with spaghetti sauce, vegetables, pepperoni and cheese. It is a tasty combination.

This is a typical dish served in Cuba or Puerto Rico, each country has their own method of preparation. You can flavor this dish with meat, but I left it out as I serve it as a side dish with my meats. It is an easy and healthy short cut and takes about 30 minutes to cook.
