    We had a delicious Yellowfin Tuna Crudo at Moutain Standard in Vail. So yummy. Their recipe had Yuzu, White Soy and Jona Gold apple. Well, I don't have any of those ingredients in my cupboards, just Sashimi grade tuna. So I had to find another tuna crudo recipe. Thank God for search engines.

    I live 15 miles from the border with Tijuana. Fresh Mexican food is everyone's favorite. We are always on the quest to find the best fish tacos, surf and turf burritos, food truck, etc...but all that needs good salsa. A good salsa will make anything taste good. This is my version based on all my friends, neighbors and local food worker's advise. I serve this with chips but I personally love it with cut up vegies like carrots, celery, etc...     I had something similar at Noodle Star in Maui. The server said they deep fried their Brussels Sprouts leaves and then put a sauce on. Those were really addictive.     April is a SAD month. Property taxes are on the 10th and then 5 days later, income taxes are due. When I'm stressed I have to find some comfort using what's in the refrigerator. Cold, leftover brown sticky rice in my refrigerator and an egg. Make sure the rice is sticky or "sweet rice" so it's more starchy and sticky. I only have brown rice but you can use white.

    We recently started eating Swiss Chard and love it. I like easy and quick recipes. I normally serve this with pan seared very thick filet mignon steaks. I use the same cast iron pan to cook the steaks and while that's resting, I cook up the creamy shallots and mushroom sauce. Put the sauce over the steaks and recycle the pan to cook the chard.

    I'm trying all different combinations of flavors to steel cut oatmeal. I use boiling water in the recipe to cut down on rice cooker time. This recipe caused my daughter to say "Mom, you should start an oatmeal restaurant." Some of us are allergic to coconut and nuts so we did not add those items during cooking, but served the non-nuts eaters and then incorporate the coconut after the fact, then turned rice cooker on for a couple of extra minutes to cook.
