I was low on ingredients the day I came up with this and needed to make an easy diinner. I had Steakumms so after searching out some recipes for ideas, I put this together. I used the stir fry sauce recipe from Linda's Low Carb but altered it by doubling it, leaving out the vinegar and oil and adding cream cheese.
I normally use frozen stir fry vegetables for this recipe but today I am substituting broccoli to get the carb count down because I'm doing induction.

I was trying to find a way to make our leftover catfish (I used my Recipe #246096 recipe) more exciting and I invented this dish. It's very easy to make and my fiance and I really loved it so I thought I'd share.
I adapted these from a Rachel Ray recipe for chili rellenos. They are so good we almost couldn't stop eating them. The only problem was that the poblano pepper was much hotter then we thought it would be. It's supposed to be mildly hot but it was hot hot.
I came up with this recipe a few years back. I just sprinkled fish with some of my favorite seasonings and it turned out well. I have been making this for a few years and my fiance and I both enjoy it. Today I came up with a catfish soup recipe using this fish and I will be posting that as well. We really enjoyed the soup so I thought I'd post both recipes.
