My friend Anne found this generationally OLD recipe off the net and made it for her brothers. This one's staying around.
The tart flavour of rhubarb is delightfully complimented by brown sugar. A 'MUST' for afternoon tea!

This is a Finnish Coffee Cake. It literally takes 30 minutes total and it tastes wonderful!
This recipe can easily be made healthier without affecting the wonderful moist texture. I substitute the butter with 2/3 cup oil and I find that by using vanilla yogurt the muffins are sweet enough even without the brown sugar.
Kids and adults LOVE this moist cake and the topping seems to be everybody's favorite...
This is a typical springtime Finnish recipe. It's so good my friends and I keep having to straighten out the edges of the pie until there isn't any left! This is also wonderful when made gluten-free.
As soon as I tasted this I had to get onto email and send the recipe to all my baking friends! It has a rich and dense texture that everybody just LOVED!
