    When I was a young girl I got to visit my relatives in Lancaster, Pa. on several summer vacations. My uncle was a "gentleman farmer". On the land lived a family that grew the crops. The wife use to cook for the family and that is how I first tasted these rich balls of dough. I never though about the recipe because that was the only place I had them. Recently I had a long phone conversation with my cuz and this recipe came up. She sent it to me and now I will share it with you. FAIR WARNING: I have not made this as I don't fry, and I'm just guessing on the amount It is rare for me to post something I did not make first, but my childhood memories tell me.....THEY ARE GREAT!

    Like so many of you, I have grandchildren, each with their own fussy palate. I am always trying to come up with recipes that all will eat at the same time. I am sure that this is not diet food nor the healthest meal I've ever made but this concoction was enjoyed even by the adults!. I made a lot but the recipe can be cut down as you need. And....since everything is cooked prior to going into the casserole, you can make this up to two days before, hold in fridge, and heat it up when you are ready!

    I bought a box mix of tabouli. Made it as stated, tasted hot, then cold.....but just did not care for it. I hate to waste food, especially in this economic crisis, so came up with this delightful dish. I served it hot as a side to recipe#169239, recipe#266753, along with recipe#160788. I made it with white rice that I was going to use the next day for fried rice, but next time I will try brown rice. Had some cold the next day for lunch, really was pleased that I had turned something that I did not like into something I would make again! Prep time does not include preparing the rice and tabouli. Don't be scared off be the carbs in this, they are the good kind!

    Roasted Vegetable Quinoa Stew

    Had more vegetables left over this week than I planned.....so this recipe was born. I made it vegetarian by choice but I believe that chicken or a strong-flavored fish would enhance this stew. If I was doing it that way, I would add already cooked, at the end of cooking the stew.I served my stew with toasted pita halves stuffed with chopped tomatoes, sliced black olives and diced hard cooked eggs. I mixed the stuffing with a little bit of french dressing and black pepper. Along with a glass of ice tea, it turned out to be a great meal!

    Here's a senior moment that turned out great! Planned to make spaghetti and meatballs for my students. This was a quick meal for me as I already had homemade meatballs and sauce in the freezer. So I just grabbed them along with some frozen recipe#166346. Threw it all into the crockpot in am. That evening as I tasted sauce and meatball for seasonings,to my horror, I found that the meatballs were roasted brussel sprouts! After my first shock, I tasted again. It was really good! Served as I would have if it was meat, with all the spaghetti dinner fixings. We ALL gave it a "Thumbs Up!". So here it is.......I made a large amt. so judge what you need for yourself.
