    My mother never made soup from scratch so I never learned how. After trying a number of soup recipes from Zaar, I came up with this recipe as a guideline for a basic veggie beef soup. I often throw in whatever veggies I have around so the soup is never exactly the same two times running; however, soup-making isn't an exact science as is baking. I'm posting the recipe so that I can give it out easily; evidently, folks seem to really like it!

    Posted in response to a request for an authentic Italian recipe. Received recipe from the wife of a doctoral student while in grad school. The couple was from Italy and had the most adorable little red-haired son! I've had some problem w/ it "melting" during baking and not remaining loaf-like but Gina said it happened occasionally to her too! Either way, this is very tasty! (When it "melted"... I just cut it up like bar cookies! No throwing THIS away!!!)

    A new bride on my first weekend visit to my in-laws, we hadn't been there long when Mrs. MacIntosh (from across the street) came over w/ the most delicious pumpkin bread imaginable. I asked for the recipe and it's the only one I've used in 35 years. Just made some with my 2 yr old granddaughter yesterday and took a slice w/ me to work today. The collegue with whom I shared it requested the recipe. I did check the database and there isn't a recipe just like this one. I would like to preserve this special (to me anyway) recipe in honor of a lovely lady. NOTE: The next time I make this, I am planning on subbing applesauce for the oil to reduce calories.
