This is simple to make given that you have a good tomato based spaghetti sauce to go with it. Recipe #18922 was designed with this in mind. Preparation of the sauce from scratch can add a lot of time to total but it is well worth it. Using fresh grated parmesan cheese will make a big difference in the success of this dish also.
Almost fresh because we use some fresh vegetables and some canned. The fresh ripe Roma tomato, green pepper, onion, and garlic give it the wonderful flavor. The canned tomato sauce, puree, and paste give it a thick but smooth consistency. This is an excellent sauce recipe for use with chicken parmesan. In fact, it was created with #141751 in mind.
This is absolutely the best tasting cornbread I have ever had. My daughters (ages 10 and 12) would eat this by itself for dinner if I would let them. Not only does it taste great, but its so moist. The sour cream and cheese ingredients make it nearly impossible for this stuff to end up dry.
Also, the cheese and sour cream keep it so moist that it will fall apart if you don't cook it enough so be sure to bake it until you see some darker brown areas on the top.
My mother came from a really small town in South Carolina where she learned some really incredible entrees. She used to make this one when I was a kid and I could never get enough. She lost the recipe for a decade or more but to my surprise it showed up recently. This is one of my all time top 5 recipes.
A very good addition to a pork based meal. I suggest you serve it with pork tenderloin, cornbread, and salad. Its fairly easy to make and it puts up well for leftovers. The original recipe came from RecipeZaar (#15745) and I altered it substantially.
